I am working on upping my breakfast game now that the kids are back in school.  Acai bowls are definitely a current favorite in our house.


Acai Bowl

If you aren’t up on this current fad, acai is a berry from the Amazon that is packed full of nutrients including antioxidants, omega-3s and amino acids. Eating these berries helps promote both a healthy heart and healthy weight.

There are a lot of places to get a great acai bowl in my home town.  A few of our favorite spots in San Diego are Beaming and Juice Crafters. But for early mornings, I prefer to make my own.

Making a acai bowl is fairly simple. Acai berries come as puree packets and can be found in the freezer section of many grocery stores including Whole Foods and Costco.  The only tricky part of making an acai bowl is getting the right texture. You want a consistency that is thick enough to be scoopable but not so dense that it doesn’t blend all the way.  To get this, blend frozen acai puree with frozen fruit such as banana or strawberries.  You also can add almond or coconut milk, if needed, to get the right consistancy.

Then, top your acai mixture off with breakfast fixings of your choice like fresh fruit and nuts, chia seeds, granola, coco nibs, coconut, bee pollen and/or almond butter.

Acai Bowl

2 Sambazon acai packs
1 frozen banana
1/2 cup frozen fruit of your choice including strawberries, blueberries, and mango
1/4 cup liquid, such as almond or soy milk
Toppings of your choice

Cut the Sambazon acai packs in half with a sharp knife and add frozen mixture to blender. Add the banana, the other frozen fruit and the liquid (add more if needed).

Put the blender top on and make sure to use the plunger tool. With blender on low, begin to blend. Stir as it starts to blend. Blend for at least 30 seconds (you don’t want an big chunks left behind). Add liquid if needed.

Add to a bowl, top with toppings of your choice, and serve immediately.
