Blue Cheese Puff Pastry Tarts with Roasted Apples and Shallots

You can whip up these yummy treats any time of year. But these are best when apples are at their in-season in the Fall.

All you need for these sweet and savory bites is just a few simple ingredients and a sheet pan or two. And don’t get scared off by the puff pastry. I used store-bought puff pastry for this roasted apple, shallot, and blue cheese tart recipe, which is super easy to work with (trust me!).

Here’s what you’ll need to make these savory apple tarts:

  • APPLES: I love using sweet apples like Fuji or Gala for this recipe.
  • SHALLOTS: You could also use onions, but shallots have a slightly sweeter, milder flavor that works well in this recipe.
  • CRUMBLED BLUE CHEESE
  • FRESH THYME
  • PUFF PASTRY: Make sure to defrost it before trying to use it.
  • OLIVE OIL
  • SALT & PEPPER
  • EGG: If you want to get the edges of your crust nice and golden, you’ll want to baste it with a beaten egg before baking.
  • HONEY (OPTIONAL): A drizzle of honey really amps the sweet and savory contrast. But it’s optional.

Step-by-Step Recipe Instructions:

Here’s how to make these mini apple and cheese tarts.

  • PREP: Preheat the oven to 425 degrees F.
  • ROAST APPLES AND SHALLOTS: In a large bowl, toss together apple and shallot slices, olive oil, salt, pepper, and thyme. Spread onto a baking sheet in a single layer and roast, occasionally tossing, until apples and shallots are tender and golden. Be careful not to overcook.
  • PREPARE PUFF PASTRY: While the apples are roasting, unfold a sheet of puff pastry on a lightly floured surface. Roll the dough into an 11 by 11-inch square. Using a 6-inch wide cookie cutter, or another round object, cut circles from the sheet of puff pastry, discarding the scraps (about 4 to 5 circles per sheet). Repeat with the second pastry sheet. Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Using a fork, prick the pastry inside the score lines.
  • COOL THE DOUGH: Place the pastry circles onto a sheet pan lined with parchment paper and refrigerate until ready to use.
  • ASSEMBLE TO TARTS: When the apple mixture is ready, add it to your puff pastry circles. Make sure the filling stays inside the scored border. Scatter the cheese crumbles on top. Drizzle (lightly) with olive oil and/or honey and season with salt and pepper, to taste. Baste the edges of the pastry with the egg wash.
  • BAKE & SERVE: Add pans to the oven and bake until pastry is golden brown and the cheese is just melted, about 15-17 minutes. Serve warm or at room temperature.
  • STORAGE: These are best served shortly after baking. The pastry will start to get chewy if it sits too long.

A FEW MORE RECIPE TIPS:

  • DEFROST THE PUFF PASTRY: Ensure your puff pastry is defrosted before use. I like to defrost mine in the refrigerator the night before using it.
  • SLICING THE SHALLOTS: Also, don’t slice the shallots too thin. They’ll likely cook faster than the apples if they are too thin. You want them golden brown when adding them to the puff pastry circles.
  • PASTRY CUTTER: Don’t stress if you don’t own a 6-inch cookie cutter. You can use a glass or any round object as a guide for making your circles. Or you can cut it into squares if you’d prefer.

  • 1/4 cup olive oil
  • 1 packed (2 sheets) puff pastry, defrosted
  • 4 ounces crumbled blue cheese
  • 2 teaspoons minced fresh thyme leaves
  • Salt and pepper, to taste
  • 1 egg, whisked
  • Honey (optional)
