Easy Roasted Apple Tarts with Shallots & Blue Cheese

Description

These mouthwatering puff pastry roasted apple and blue cheese tarts deliver that WOW factor. But they take just minutes to make! 


Ingredients

  • 23 apples, cored, quarters and cut 1/4-inch thick (see note)
  • 23 large shallots, peeled and sliced 1/4-inch thick
  • 1/4 cup olive oil
  • 1 packed (2 sheets) puff pastry, defrosted
  • 4 ounces crumbled blue cheese
  • 2 teaspoons minced fresh thyme leaves
  • Salt and pepper, to taste
  • 1 egg, whisked
  • Honey (optional)

Instructions

  1. PREP: Preheat the oven to 425 degrees F.
  2. ROAST APPLES AND SHALLOTS: In a large bowl, toss together apple and shallot slices, olive oil, salt, pepper, and thyme. Spread onto a baking sheet in a single layer and roast, tossing occasionally, until apples and shallots are tender and golden, about 20-30 minutes. Be careful not to overcook.
  3. PREPARE PUFF PASTRY: While the apples are roasting, unfold a sheet of puff pastry on a lightly floured surface. Roll the dough into an 11 by 11-inch square. Using a 6-inch wide cookie cutter, or another round object, cut circles from the sheet of puff pastry, discarding the scraps (about 4 to 5 circles per sheet). Repeat with the second pastry sheet. Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Using a fork, prick the pastry inside the score lines.
  4. COOL THE DOUGH: Place the pastry circles onto a sheet pan lined with parchment paper and refrigerate until ready to use.
  5. ASSEMBLE TO TARTS: When the apple mixture is ready, add it to your puff pastry circles. Make sure the filling stays inside the scored border. Scatter the cheese crumbles on top. Drizzle lightly with olive oil and/or honey and season with salt and pepper, to taste. Baste the edges of the pastry circles with the egg.
  6. BAKE & SERVE: Add pans to the oven and bake until pastry is golden brown and the cheese is just melted, about 15-17 minutes. Serve warm or at room temperature.

  • I like to use juicy, sweet apple varieties, like Fuji or Gala, for baking.
