Description
This easy confetti skillet cookie has all the yummy taste of your favorite sugar cookies but is easier to make — and has sprinkles!

- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 1/2 cups sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sprinkles of your choice, plus extra for topping
Instructions
- Preheat the oven to 350 degrees.
- Grease the bottom and sides of a large, oven-proof skillet with butter or baking spray. You can also line the bottom with parchment paper.
- Beat the butter and sugar together using an electric or stand mixer until light and fluffy, about 3 minutes. Add the egg and vanilla and mix until incorporated.
- Whisk together the flour, baking powder, and salt in a separate.
- Add the flour mixture slowly until incorporated, about 2 minutes.
- Mix in your sprinkles (gently).
- Add the dough to your prepared pan, and gently and evenly spread it in the pan using a rubber spatula. Then, smooth the top and add more sprinkles, if desired.
- Bake until edges start to brown and the top is golden (but still slightly soft), about 30-45 minutes depending on your oven and size of your skillet.
- Cool on a wire rack until the cookie is set, about 15 minutes. If you are removing it from the pan, do so now.
- Decorate and serve, as desired.
