This berry gin sour is the perfect cocktail for summer! It’s a delicious blend of tangy, boozy, fruity yumminess. And it’s easy to make with blackberries, lemon juice, gin, a splash of plum bitters, some strawberry simple syrup, and an egg white. Or some aquafaba (aka: vegan chickpea water) if you don’t like putting eggs in your cocktails.
Blackberry Gin Sour Recipe
This berry gin sour cocktail is a gorgeous, fruity take on the classic gin sour recipe.
And it really tastes as good as it looks! It’s full of summer berry flavor but it’s not too sweet. And it’s just the right amount of boozy.
It’s one of my favorites. And I am pretty sure you’re going to love it too!
Berry Gin Cocktail Ingredients
Here’s what you’ll need to make this berry gin sour:
- BLACKBERRIES: I like to use fresh, ripe sweet berries.
- PLUM BITTERS
- FRESH LEMON JUICE
- GIN: Use your favorite!
- STRAWBERRY SIMPLE SYRUP: This is made with water, sugar, fresh berries, and some lemon juice. I have included the recipe below. You could also just use regular simple syrup if you prefer.
- AQUAFABA or EGG WHITE: I used some aquafaba for this recipe. Aquafaba is the water that is drained out of a can of chickpeas. It is naturally vegan. And it fluffs up just as nicely as an egg white. And don’t worry, it does NOT taste like chickpeas. But you can use egg white if you prefer.
- GARNISH: Use edible flowers, berries, or mint as a garnish.
Gin Sour Step-By-Step Instructions:
Here’s how to make this yummy gin sour.
- MUDDLE BERRIES: Add 2-3 blackberries to a cocktail shaker and muddle them.
- ADD INGREDIENTS: Next, add the plum bitters and then the lemon juice, strawberry simple syrup, gin, and aquafaba (or egg white).
- ADD ICE & SHAKE: Fill the shaker with ice and shake vigorously for 30 seconds or so.
- SHAKE AGAIN: Stain into a glass and discard the ice. Return the cocktail to the shaker and give it another good shake.
- STRAIN INTO COCKTAIL GLASS: Stain the cocktail into a cocktail glass. You might have to scoop out some of the foam with a spoon.
- GARNISH AND ENJOY!

Here are a few helpful tips:
- MAKE AHEAD: You can make the strawberry syrup ahead of time. The recipe below makes a large batch, which you can store in an airtight container in the fridge for a week or two.
- SHAKE IT TWICE: You can get away with shaking it once. But giving it an extra shake does help that gorgeous foam get nice and fluffy.
- CAN I USE OTHER BERRIES?: Yes! Just adjust the sweetener (the syrup) if needed.
- HOW TO USE LEFTOVER CHICKPEAS: If you opt for making this with aquafaba, you’ll be left with a can full of chickpeas. You can put them to good use in this yummy (and easy) hummus recipe!

Ingredients
FOR THE COCKTAIL
- 2–3 blackberries
- 3/4 ounce fresh lemon juice
- 1 1/2 ounces strawberry simple syrup
- 1 1/2 ounce gin
- 1 egg white or 2 tablespoons aquafaba
- Optional garnish: edible flowers, berries, or mint
FOR THE STRAWBERRY SIMPLE SYRUP
- 1 1/2 to 2 cups clean and quartered fresh strawberries
- 1 cup granulated sugar
- 1 cup water
- Juice of one lemon
Instructions
FOR THE COCKTAIL
- MUDDLE BERRIES: Add 2-3 blackberries to a cocktail shaker and muddle them.
- ADD INGREDIENTS: Next, add the plum bitters and then the lemon juice, strawberry simple syrup, gin, and aquafaba (or egg white).
- ADD ICE & SHAKE: Fill the shaker with ice and shake vigorously for 30 seconds or so.
- SHAKE AGAIN: Stain into a glass and discard the ice. Return the cocktail to the shaker and give it another good shake.
- STRAIN INTO COCKTAIL GLASS: Stain the cocktail into a cocktail glass (to remove any berry seeds or pulp). You might have to scoop out some of the foam with a spoon.
- GARNISH AND ENJOY!
FOR THE STRAWBERRY SYRUP
- ADD INGREDIENTS TO PAN: Add the strawberries, sugar, water, and lemon juice to a large saucepan and bring to a boil.
- LET SIT: Once the water is boiling, immediately turn off the heat and cover the pan. Let it sit (without heat) for about an hour.
- MASH & STRAIN: Next, mash the strawberries with a potato masher. Then strain the mixture into a large, air-tight container. Let cool completely, cover, and store in the refrigerator until ready to use. It will last a week or two.
Notes
To make this recipe vegan, use aguafaba. And don’t worry, it doesn’t taste like chickpeas!
