Description
This refreshing, not-too-sweet Aperol sour cocktail is tangy and citrusy with a luscious frothy top. And while it’s similar in taste to an Aperol spritz, it has a mellower, more balanced flavor. I’ve also included a vegan option.

- 2 ounces Aperol
- 1/2 ounce gin (I prefer a neutral-flavored gin like Hedrick’s)
- 3/4 ounces fresh lemon juice
- 1/2 ounce simple syrup (see recipe in notes)
- 1 egg white or 2 tablespoons aquafaba
- Garnish with a strip of lemon or orange peel or a dash or two of bitters
Instructions
- ADD INGREDIENTS TO SHAKER: Add Aperol, gin, lemon juice, simple syrup, and aquafaba or egg white to a cocktail shaker.
- ADD ICE & SHAKE HARD: Fill the shaker with ice and shake vigorously for 30 seconds or so.
- STRAIN & SHAKE AGAIN: Strain into a glass and discard the ice. Return the cocktail to the shaker and give it another good shake.
- STRAIN INTO A CHILLED COUPE GLASS: Strain into a chilled cocktail glass. You might have to scoop out some of the foam with a spoon.
